400g Game Farm Quail Breast Fillets
80g baby rocket, washed
8 cherry tomatoes, washed and cut in half
100g goats feta
4 tablespoons extra virgin olive oil
4 tablespoons balsamic glaze
2 tablespoons vegetable oil salt and pepper to taste
Pour vegetable oil into a fry pan and heat. Season Game Farm Quail Breast Fillets with salt and pepper, cook to your liking then set aside. Place rocket, fetta, olives and cherry tomatoes onto a plate and sprinkle with salt and pepper. Place Game Farm Quail Breast Fillets on top, drizzle with olive oil and decorate plate with balsamic glaze. Variation: Use shaved parmesan or Persian fetta instead of goats feta.
